When I made this for my family, my husband said that’s his new favorite and he said, if it’s his last meal this is what he wants. I think for a guy who gets fed well everyday that’s a lot LOL. Let me share with you how I made it so you could treat your family and friends with this delicacy as well.

Ingredients

  • Chicken Skewers
  • 2 lbs. Chicken Breast

  • 2 tbsp. Red Curry Paste

  • 1 tsp. or to taste Sea Salt

  • 2 tbsp. Vegetable Oil

  • 1-2 tbsp. Vegetable Oil for cooking

  • Bamboo skewers

  • The Peanut Sauce
  • 2 tbsp. Red Curry Paste

  • 3/4 cup Smooth Peanut Butter

  • 1/4 tsp. Sea Salt

  • 1 tbsp. Dark Soy Sauce

  • 2 tbsp. Rice Vinegar (seasoned)

  • 3/4-1 cup of water (depending how thin you like your sauce)

  • For serving
  • Mango Salsa

  • Cooked Rice of your choice

Let’s make it

  • Cut chicken breast in 1/2 inch thick, 1 inch wide strips and skewer on bamboo skewers.
  • In a small bowl mix curry paste, salt, rice vinegar and 2 tbsp. vegetable oil.
  • With a small brush the paste all over the chicken.
  • In a skillet preheat a couple of tablespoons of vegetable oil and cook chicken on a medium – high heat from both sides until it’s done. You can cut the thickest part with the knife to see if there is no more pink meat in the middle.
  • Mix all the Peanut Sauce ingredients together with the whisk or in a small blender and set it aside.
  • Prepare Mango Salsa.
  • Serve chicken immediately with cooked rice, Mango Salsa and Peanut sauce.
  • Enjoy!

Notes

  • Can be served as an appetizer at room temperature or hot as a main dish. Either way it’s delicious!
