This is a fancy looking, refreshing, quick, easy and light appetizer which can be a time saver.
It could be served as an appetizer before dinner or a light lunch or as a snack served with a glass of your favorite wine. You do not need an exact measurements for it. Just as I love to say, make your plate and food to look pretty. That’s all the measurement you need for this dish 🙂

Pear and Blue Cheese Salad

This is a fancy looking, refreshing, quick, easy and light appetizer which can be a time saver.
It could be served as an appetizer before dinner or a light lunch or as a snack served with a glass of your favorite wine. You do not need an exact measurements for it. Just as I love to say, make your plate and food to look pretty. That’s all the measurement you need for this dish 🙂 


You can arrange it on a plate, cover with a plastic wrap and keep it in the fridge a few house in advance, just put oil, salt and orange juice on it right before serving to keep its freshness.

Ingredients

  • A good handful of baby greens

  • 2 tbsp. of roasted cashew nuts

  • 1/2 of ripe, soft kind of pear, sliced in thin slices lengthwise

  • 2 tbsp. of crumbled blue cheese (I used gorgonzola) 

  • 2 tbsp. of sweetened dried cranberries

  • 1/2 tsp. of orange zest 

  • 2 tbsp. of freshly squeezed orange juice

  • A pinch of salt 

  • Freshly ground black pepper

  • 1 tbsp. of extra virgin olive oil

Let’s make it

  • Arrange all the ingredients on the plates starting with baby greens and finishing with orange zest, orange juice, olive oil, salt and pepper.
  • Enjoy!
