Truffle and Dill Melted Cheese Spreads

This is modified one of my favorite childhood recipes. As far as I know, there is nothing similar in US stores. In Lithuania it’s called “Lydytas sūrelis”, which means melted cheese. 


It’s very healthy, keto, cheese spread. It will take 5 min (physical work) to make. You can make it a few days ahead.
This time I made with dill and truffles. I’ll put the link below what truffle sauce I used.
You can also make it with smoked ham (just blend it in a blender and add it to the cheese), smoked salmon or go for sweet and add honey or even some toasted grounded nuts, like peanuts, hazelnuts or almonds.
Serve it with crackers, toasted bread or spread it on your bagel. Delicious in any way.
Let me show you how I make it.

Ingredients

  • 450 g or 1 lb. of farmers cheese (if you are having a trouble finding it, just let me know and I will post how to make it at home. It’s very easy and requires just a couple ingredients)

  • 1 tsp. of baking soda

  • 1 tsp. of fine sea salt

  • 2 egg yolks

  • 75 g or 1/3 cup of unsalted butter, softened

  • For dill dip
  • 2 tbsp. of fresh dill, finely chopped

  • For truffle dip
  • Add 4 tbsp. of truffle sauce, I used this truffle sauce

Let’s make it

  • Put in a food processor farmers cheese, baking soda, salt and egg yolks and blend it until smooth. Leave it for 20 min for baking soda start to work.
  • Transfer in a pot with a heavy bottom and heat it constantly mixing over a low heat until it becomes like a custard consistency. Cool slightly, add any flavors you want and refrigerate.
  • You can serve it as is or chilled. If you are planning to add and additions, now it’s a time to do so.
  • Serve and enjoy!
