Grilled Zucchini, Marinated Grilled Pepper and Cucumber Salad

Ingredients

  • 2 medium size zucchini, sliced in 1/2 inch thick slices (lengh-wise)

  • 2 marinated grilled red peppers, chopped

  • 2 persian cucumbers or 1 small English cucumber

  • Some olive oil

  • A few basil leafes sliced in strips (chiffonade)

  • 10 black olives, cup in half

  • 1/2 cup crumbled feta cheese

  • 3 tbsp Chive Oil

  • A few springs of fresh dill

  • Freshly ground black pepper

  • Red Pepper flakes, I like to use Szechuan Pepper flakes

Let’s make it

  • Brush zucchini slices with some olive oil from both sides and grill on indoor or outdoor grill from both sides to get some char marks.
  • Place in a large platter and top with marinated peppers, cucumbers, basil, olives, feta cheese, pepper, dill, and drizzle some oilive and chive oil.
  • Serve and enjoy!
