Grilled zucchini, feta cheese and black salt salad

Very decorative side dish or appetizer idea. Easy to make and could be made a few hours in advance. I paired with lamb chops and it was very delicious. It can be made a few hours in advance and kept covered with plastic wrap in the refrigerator.

Ingredients

  • 3-4 medium size zucchinis sliced thinly with mandolin, around 1/2 cm thickness

  • 3-4 medium size radishes

  • 4 oz. of feta cheese, crumbled

  • 3 tbsp. of roughly chopped cilantro leaves

  • 1/2 tsp of black salt

  • Freshly cracked black pepper

  • 2 tbsp. of lemon juice

  • 4 tbsp. of olive oil, divided

Let’s make it

  • Slice the zucchinis ad radishes using a mandolin and brush each side of zucchinis with olive oil using a pastry brush.
  • Grill zucchinis on a preheated to 400 F grill from both sides approximately 2 min per side or until you get nice char marks.
  • Place grilled zucchinis on a large platter, add crumbled feta, cilantro leaves, radishes and sprinkle with black salt, pepper.
  • Mix lemon juice with 2 tbsp. of olive oil and drizzle all over the salad.
  • Serve and enjoy!
