Very decorative side dish or appetizer idea. Easy to make and could be made a few hours in advance. I paired with lamb chops and it was very delicious. It can be made a few hours in advance and kept covered with plastic wrap in the refrigerator.

Ingredients
3-4 medium size zucchinis sliced thinly with mandolin, around 1/2 cm thickness
3-4 medium size radishes
4 oz. of feta cheese, crumbled
3 tbsp. of roughly chopped cilantro leaves
1/2 tsp of black salt
Freshly cracked black pepper
2 tbsp. of lemon juice
4 tbsp. of olive oil, divided
Let’s make it
- Slice the zucchinis ad radishes using a mandolin and brush each side of zucchinis with olive oil using a pastry brush.
- Grill zucchinis on a preheated to 400 F grill from both sides approximately 2 min per side or until you get nice char marks.
- Place grilled zucchinis on a large platter, add crumbled feta, cilantro leaves, radishes and sprinkle with black salt, pepper.
- Mix lemon juice with 2 tbsp. of olive oil and drizzle all over the salad.
- Serve and enjoy!
