Happy Thirsty Thursday! This cocktail I dedicate to my beautiful sister in law, Lynda. She appreciates a good mojito. This is non traditional, with gin. Hope you enjoy too! Cheers!
Backberry Gin Mojito
1/4 cup or 6-7 Fresh Blackberries
3 oz. +1 oz. Empress Gin
1/2 oz. Frehsly Squeezed Lime Juice and 1/2 lime zest
1/2 oz. Simple Syrup
7-10 Fresh mint leaves
Fresh Mint Spring, lemon twist and a few blackberries brushed with edible gold (optional) for garnishing
Let’s make it
- Brush blackberries with some edible gold (optional), skewer and set it asside.
- Place blackberries, simple syrup, mint leaves, lime juice, lime zest to a blender and mule for a bit, just to crush blackberries and mint leaves.
- Add gin, ice and shake viorously for 30 seconds.
- Strain into 24 oz glass filled with ice. Top with club soda. Using a back of the spoon add 1 oz of the gin on the top. Garnish with golden blackberries and fresh mint.
