Grilled Pork Tenderloin with Mango Salsa | Dinner in under 30 min.

Rainbow of colors and flavors in your plate and your mouth. This dish is very easy to make, but you get that “wow” effect when you serve and eat it. It’s absolutely delicious and no any sauce is needed. Mango salsa gives so much flavor or moisture to the dish, not to mention, that the meat is juicy and flavorful by it self.

Butterflied Grilled U12 Shrimp

If you are not familiar with U12 shrimp, it’s a size of shrimp, meaning that in 1 pound will be under 12 shrimps. It’s very large and juicy shrimp. What’s the biggest shrimp size? Extra colossal shrimp is the largest size available in seafood markets with counts as large as 5 shrimp per pound. However, there are Asian tiger shrimp that weigh 7-11 ounces each with a count of just 1-2 per pound. I have made with smaller (size 16-20) shrimp, works just perfect.

Since I shared my “Sweet Zivile” Habanero Pepper Jelly with our friend Michael to try, he was putting it literally on anything, grilled chicken etc., even on ice cream! I know, sounds crazy, I didn’t try this variation yet, but I will. I tried the sandwich and I can say it’s really interesting! I love it!
