Grilled Zucchini, Marinated Grilled Pepper and Cucumber Salad

2 medium size zucchini, sliced in 1/2 inch thick slices (lengh-wise)
2 marinated grilled red peppers, chopped
2 persian cucumbers or 1 small English cucumber
Some olive oil
A few basil leafes sliced in strips (chiffonade)
10 black olives, cup in half
1/2 cup crumbled feta cheese
3 tbsp Chive Oil
A few springs of fresh dill
Freshly ground black pepper
Red Pepper flakes, I like to use Szechuan Pepper flakes
Let’s make it
- Brush zucchini slices with some olive oil from both sides and grill on indoor or outdoor grill from both sides to get some char marks.
- Place in a large platter and top with marinated peppers, cucumbers, basil, olives, feta cheese, pepper, dill, and drizzle some oilive and chive oil.
- Serve and enjoy!
