They always come out very juicy and full of flavor. My mouth is watering as I write it LOL… Seriously, they are so good! This recipe has been one of my best grilling recipes for over 20 years. It’s simple, quick and very delicious. What else do you need?! Choose chops at least 9 oz size anda 1 inch high. If you get too thin, it will come out dry. I always buy a whole piece of pork loin and cut it myself. I use mayo in the marinate, but don’t worry, it won’t be greasy, fatty or something like that. Almost all the marinate will melt on the grill making lost of good smoke and you will be left with beautiful and flavorful chop. If you want to make it “Dinner in under 30 min.”, marinate chops in the morning or the night before. You will be left just to throw the chops on the grill and toss the salad.

Ingredients

  • 8 pork chops, 10 oz. or ~290 g. each

  • 8 large cloves of garlic, grated or pressed

  • Generous amount of salt and freshly grated black pepper

  • 1 cup of mayo

  • 1/4 cup of grainy Dijon mustard

  • 1 tsp. dried basil

  • 1 tsp. dried oregano

  • 1/2 cup of ketchup

Let’s make it

  • Pat dry each chop and sprinkle with generous amount of sea salt and freshly grated black pepper from all sides.
  • Mix the rest of ingredients together making a marinade and dip each chop, let drip the access of the marinate and place it in a Ziplock bag or some container to marinate. Close the bag or container and let it marinate for at least 15 min or over night for the best results.
  • Preheat the grill (charcoal is preferred) to at least 450 F and grill from both sides, flipping occasionally until very nicely golden brown plus has some char marks and reaches internal temperature of 165 F. Keep some water bottle next to the grill. You might get a fire flare ups. Nothing dangerous, but there will be lots of fat melting. Just in case.
  • Let it rest for 5-10 min before you serve it.
