Isn’t the sear the point of grilling? Yes, it is one of them, besides the smoky flavor. Sometimes you grill and the sear is just not happening? I will be talking today about meat like steak, pork chop or chicken breast. First of all, to get a nice sear, you have to pat dry the meat very well to remove any moisture, otherwise the meat will be steaming instead of getting those beautiful char marks. Second, and the best tip is to flip the meat on the different spot of the grill then where it was originally cooking. Why? Because it’s hotter! You are welcome!
