Ingredients

  • For the Habanero Pepper Jelly glazed Salmon
  • 1 salmon file, ~3 lbs., cut in 6 portion size pieces

  • Salt and pepper to taste

  • 2 tbsp. of olive oil

  • 6 tbsp. of “Sweet Zivile” Habanero Pepper Jelly

  • For the Lemon – Parmesan Asparagus
  • 1 lb. of asparagus, trimmed

  • 2 tbsp. of olive oil

  • 3 tbsp. of freshly grated parmesan cheese

  • Salt and pepper to taste

  • 1/2 of lemon zest

  • 1/2 of lemon juice

Let’s make it

  • Preheat the oven to 425 F.
  • Place the salmon on the baking sheet lined with some parchment paper.
  • Sprinkle with salt and pepper from both sides and top with generous amount, approximately 1 heaping tablespoon of Habanero Pepper Jelly. Distribute evenly with the pastry brush.
  • Roast in the oven for 18-20 min.
  • Place asparagus on the small baking sheet and drizzle with some olive oil.
  • Sprinkle with salt and pepper to taste.
  • Grate parmesan cheese and lemon zest over the asparagus.
  • After salmon been in the oven for 10-12 min, add asparagus in to the oven and finish cooking. Asparagus need ~ 7-9 min. to be cooked but still have some nice crunch.
  • Serve immediately with more Habanero Pepper Jelly on the side.
  • Enjoy!
