Beautiful, citrusy grilled fish. All the flavors are just meant to be together. It’s easy to make, looks impressive and it’s very delicious. I use golden pompano, but you can substitute with any other your favorite fish. Do not skip grilled lemons. After you grill them they release sweetened caramelized juice and ads wonderful flavor to this dish.

5 golden pompano
5 tsp. of lemon pepper
Zest of 1 big lemon and 1 orange
Half of lemon juice
7 cloves of garlic (finely grated or pressed)
5 tbsp. of extra virgin olive oil
Fresh dill
- For serving
Fresh Thai basil
Garlic
Grilled lemons
Red chilies
Radishes
Let’s make it
- Make a few incisions in the fish. Mix all the rub ingredients and rub it in well (don’t forget inside).
- Stuff fish with fresh dill and garlic cloves ~1 clove/ fish(sliced).
- Grill the fish and halved lemons on a medium low (350 F-375 F) grill until it’s done (20-25 min).
- Right before serving sprinkle with some chopped fresh Thai basil, radishes, chili, squeeze grilled lemon juice, and serve!
- Enjoy!
