Why would you ever buy sandwich meat? Peppery pork loin

This is my long time, foolproof recipe for pork loin sandwich meat. Why would you buy at the store when it requires only 5 min, I am serious, only 5 min of your time, only to line up your spices and to make it your own. 
You can use chicken breast, turkey breast, pork loin, pork tenderloin or any other tender and lean piece of meat. You can hot smoke with the smoker (this is the one I use) plus using a cold smoke generator tube in any kind of grill, or most of the times, I just pop into the oven and in 30-45 min it’s done! Cut in smaller pieces, vacuum seal and keep in the fridge for weeks.
Next time you make a sandwich, you know what is in there.

You can use chicken breast, turkey breast, pork loin, pork tenderloin or any other tender and lean piece of meat. Ingredients

  • 1100 g or 2.4 lb. of pork loin (lean, most fat been removed)

  • 2 tbsp. of sweet paprika

  • A pinch of cardamom

  • 3 tbsp. of freshly ground black pepper (coarse preferred)

  • A pinch of chili flakes

  • 1/2 tsp. of cayenne pepper

  • 1 tbsp. of garlic powder

  • Salt to taste (I used ~1.5 tbsp.)

  • 1 tsp. of freshly ground black pepper

Let’s make it

  • Mix all the species together, rub into the meat and leave it for at least a couple of hours in the fridge.
  • Smoker method
  • Preheat your smoker to 180-250 F, place the meat and smoke until internal temp reaches 165 F.
  • Oven method
  • Preheat the oven to 350 F, Place the meat on the baking sheet, lined with a parchment paper with a tiny bit of oil. Roast until internal temp reaches 165 F.
  • After it’s cooked
  • Let it cool completely at room temperature. The meat will be very juicy and tender. Great for sandwiches or as a snack.
