Very flavorful Dumpling Soup

- For dumplings
1.5 lb. or 680 g. of ground meat (pork or chicken)
Salt and pepper to taste
1/2 cup of water
1 tbsp. of chili oil
1 garlic clove
1 tsp of grated ginger
1 package of gyoza wrappers
- For the stock
2.5 L (2.5 quarts) of water
Shitake mushrooms (you can use any other mushrooms, but shitake has the most of umami flavor)
3 tbsp. of sesame oil
2 tbsp. of (Suka Toyo) dipping sauce or you can substitute with 2-3 tbsp. of any other spicy Asian vinegar
3 tbsp. of fish sauce
3 tbsp. of soy sauce
Lime and cilantro for serving
