Raw oysters|Shucking, smoking and making a sauce

  • Raw, the best oysters you can get. We usually get at least 6 oysters per person.

  • Oyster shucking knife

  • Lemons for serving

  • For the sauce
  • 4 tbsp. of ponzu sauce

  • 1 tbsp. of smoked soy sauce

  • 1 tbsp. of rice vinegar

  • 1 tbsp. of very finely chopped red onion

  • 1 tsp. or to your taste of finely chopped red chili

  • For smoke infused oysters
  • Smoke infuser

  • Smoking cover

  • Wood chips

Let’s make it

  • Wash oyster very well under running water, scrubbing with a brush.
  • Shuck the oysters. Please watch the video.
  • For smoked oysters
  • Place the oysters over the ice.
  • Cover oysters with the smoking cover and insert the smoke infuser into the whole.
  • Start the smoker and let to smoke for 30-60 sec.
  • Leave the smokers covered for 15-30 min.
  • Uncover and enjoy!
  • For the sauce
  • Mix all the ingredients together.
