Easy and quick grilled chicken for a weeknight dinner

Don’t feel like cooking? Have a chicken breast sitting in your fridge? Want dinner in 15-20 min? I have an idea for you!
You can marinate for a few hours but if you got no time, 15-20 min (while grill or oven gets hot) is enough.

Ingredients

  • 2 chicken breast halves (cut in 3 pieces each)

  • 1/2 cup of olive oil

  • 1/4 cup of balsamic vinegar

  • 2 tbsp. of salt

  • 1 tbsp. black pepper

  • 1/2 tsp of Szechuan pepper chili or any other chili to your taste

  • 1/4 cup of soy sauce

  • 1/4 cup of brown sugar

  • 5 cloves of garlic (pressed or grated)

  • 1 inch of fresh ginger, grated

Let’s make it

  • Preheat the grill to 450-500 F or oven with the grilling plate to 425 F
  • Place the chicken in a ziploc bag. Mix all the ingredients together and pour on the chicken. Close the bag and leave for 15-20 min or up to over night.
  • Grill the chicken until it’s done. 15 min if you use the oven.
  • Serve with some fresh cilantro and chilies and your favorite salad.
  • Enjoy!
