Easy and quick grilled chicken for a weeknight dinnerDifficulty: Easy
Don’t feel like cooking? Have a chicken breast sitting in your fridge? Want dinner in 15-20 min? I have an idea for you!
You can marinate for a few hours but if you got no time, 15-20 min (while grill or oven gets hot) is enough.
2 chicken breast halves (cut in 3 pieces each)
1/2 cup of olive oil
1/4 cup of balsamic vinegar
2 tbsp. of salt
1 tbsp. black pepper
1/2 tsp of Szechuan pepper chili or any other chili to your taste
1/4 cup of soy sauce
1/4 cup of brown sugar
5 cloves of garlic (pressed or grated)
1 inch of fresh ginger, grated
Let’s make it
- Preheat the grill to 450-500 F or oven with the grilling plate to 425 F
- Place the chicken in a ziploc bag. Mix all the ingredients together and pour on the chicken. Close the bag and leave for 15-20 min or up to over night.
- Grill the chicken until it’s done. 15 min if you use the oven.
- Serve with some fresh cilantro and chilies and your favorite salad.
