Bacon Wrapped Asparagus with Cilantro Aioli

Bacon Wrapped Asparagus with Cilantro Aioli.

Ingredients

  • 1 lb. of asparagus

  • 1 lb. of thin sliced bacon

  • Drizzle of olive oil

  • Freshly cracked black pepper to taste

  • Dash of cayenne paper

  • 1-2 tbsp. of balsamic vinegar

  • For Cilantro aioli
  • 1 cup of mayo

  • 1 lime zest and juice

  • 1 cup of chopped cilantro

  • 1 garlic clove

  • Freshly cracked black pepper

  • A pinch of cayenne pepper

Let’s make it

  • Preheat the oven to 425 F
  • Wash asparagus and dry well.
  • Cut the asparagus tuff part off.
  • Wrap the asparagus with bacon slice. If the asparagus is short you might need only half of bacon slice for each asparagus.
  • Place on the baking tray leaving space between them. Drizzle the asparagus top tips with a little bit of olive oil, sprinkle with some black and cayenne pepper, drizzle balsamic vinegar and bake it for 20-25 min until bacon gets browned.
  • Put in a blender all the ingredients for aioli and blend it until it’s smooth.
  • Serve with the aioli or some tahini sauce.
  • Enjoy!

Notes

  • Don’t nee to use any salt, because bacon is salty.
