When I grew up in Europe, Lithuania, we didn’t have fresh vegetables all year long then. Now they import from Spain, Greece, Turkey etc. Each summer we would be waiting impatiently for 1st vegetables to ripe so we would be able to make this delicious, refreshing salad. Usually it would happen in mid June. We would eat just by it self or with the side of cooked potatoes (best if fresh, young potatoes, then we would cook it with peel), with grilled pork or chicken kebobs (šašlykai). We use sour cream and salt for dressing. Can you use yogurt instead? Yes, you can, but then it won’t be any Lithuanian, because Lithuanians don’t use yogurt in their dishes. Let’s go in the garden, get some fresh vegetables and make this delicious salad. Let’s taste some Lithuanian summer flavor!
Lithuanian Summer Garden Salad

1 large head of green lettuce, copped
7-8 radishes, chopped
1 English cucumber, chopped
1 bunch of spring onions (green and white parts), chopped
Salt to taste
3-4 tbsp sour cream
1 bunch of fresh dill, chopped
