Dukkah Rainbow Carrots

Dukkah seasoning is one of my favorite blends. It gives nuttiness, freshness, great aroma and some crunch. Dukkah roasted rainbow carrot is a wonderful addition to any dish and great decoration to the table.

Ingredients

  • 2 lbs. of organic rainbow carrots

  • 4 tbsp. of olive oil

  • Salt and pepper to taste

  • 3 tbsp. of Dukkah seasoning

Let’s make it

  • Preheat the oven to 400 F.
  • Trim the carrots if they are bigger and cut it in to even sticks or leave it whole if you use it a small ones and place it on the baking sheet. Drizzle with olive oil, sprinkle salt and Dukkah spices.
  • Roast it in the oven for 35-45 min or until it’s fork tender but still has some crunch to it, not mushy.
  • Serve it and enjoy!
