Salmon carpaccio is always a delicious decoration on my table.
NOTE: Keep in mind, you need to use a sushi grade fish for it. You can not just buy a salmon from the store and use it. Fresh salmon might have parasites.

Ingredients
3 oz. of very thinly sliced sushi grade salmon or tuna
2 tbsp. of capers
3 tbsp. of thinly shredded or sliced parmesan cheese
a couple of very thin slices of red onion
A good handful of baby lettuce or arugula
Freshly grated black pepper
5-6 large caperberries
Let’s make it
- Get a large platter and lay down all the ingredients, starting from the salmon.
- Sprinkle with raspberry vinaigrette right before serving.
- I decorated with eatable flowers from my garden.
- Enjoy!
Notes
- Can be made a few hours in advance and kept in the refrigerator covered. If made in advance, add the vinaigrette only right before serving.
