Pear and Blue Cheese Salad

It could be served as an appetizer before dinner or a light lunch or as a snack served with a glass of your favorite wine. You do not need an exact measurements for it. Just as I love to say, make your plate and food to look pretty. That’s all the measurement you need for this dish 🙂Â
You can arrange it on a plate, cover with a plastic wrap and keep it in the fridge a few house in advance, just put oil, salt and orange juice on it right before serving to keep its freshness.
Ingredients
A good handful of baby greens
2 tbsp. of roasted cashew nuts
1/2 of ripe, soft kind of pear, sliced in thin slices lengthwise
2 tbsp. of crumbled blue cheese (I used gorgonzola)Â
2 tbsp. of sweetened dried cranberries
1/2 tsp. of orange zestÂ
2 tbsp. of freshly squeezed orange juice
A pinch of saltÂ
Freshly ground black pepper
1 tbsp. of extra virgin olive oil
Let’s make it
- Arrange all the ingredients on the plates starting with baby greens and finishing with orange zest, orange juice, olive oil, salt and pepper.
- Enjoy!
