1 lb. shrimp, heads on
1 cup Asian frying mix
Oil for deep frying
- For the topping
1/4 cup of chopped garlic
3 tbsp. flat leave parsley, chopped
1 1/2 tbsp. Szechuan pepper flakes
1/2 cup of vegetable oil
1/2 tsp. sea salt
Let’s make it
- Wash the shrimp and remove the vein without cutting it up. Use toothpick to pierce and pick between 3-4 section from the tail. That vein contains shrimp poop. It does not take much time to do that. DO NOT skip this step, other wise shrimp is going to be bitter.
- Wash shrimp again and coat in dry frying mixture.
- Preheat oil in a deep frying pan or pot to 350 F or until you drop a few sprinkles of frying mixture and it bubbles.
- Fry shrimp trying do not overcrowd the pan until it’s just until it’s done and a little yellow and crispy. ~ 2-3 min. DO NOT over cook shrimp otherwise it’s gonna be dry.
- Let’s make topping
- While shrimp is cooking, in a small deep pan preheat oil until it start to smoke.
- Turn off the heat and drop all the ingredients at once. Be careful, it will bubble. Mix slightly and let it sit until shrimp is cooked.
- Assembling
- Place shrimp on a serving plater and with a slotted spoon scoop the topping all over the shrimp, trying to put ~ 1/2 tsp of mixture on each shrimp belly.
- Sprinkle sea salt and serve.
- Eating
- Since you cleaned the shrimp, you can eat it all with the head and tail and everything. If you like shrimp but have never tried eating a whole shrimp, you should try it! It’s absolutely delicious. There is nothing gross, everything is cooked and shrimp’s head and tail is crispy. Tastes like shrimp chips!
- Enjoy!

Notes
- It’s good served hot, just made or room temperature. That means you can prepare 15-30 min before your dinner or guests arrive.
