Shakshuka for a chilly day brunch

Chilly winter morning and shakshuka sounds so good to me!

Shakshuka is North African and Middle Eastern dish. It could be served for breakfast or any other meal. It is a vegetarian dish based on onions, tomatoes, species and poached eggs on the top, but you can add some Italian sausage if you wish.

Let me share with you my virgin of shakshuka.

Chilly winter morning and shakshuka sounds so good to me!


Shakshuka is North African and Middle Eastern dish. It could be served for breakfast or any other meal. It is a vegetarian dish based on onions, tomatoes, species and poached eggs on the top, but you can add some Italian sausage if you wish.
 
Let me share with you my virgin of shakshuka.

Ingredients

  • 1 large or 2 medium onions, chopped

  • 3 cloves of garlic, finely minced

  • 5 tbsp. of extra virgin olive oil

  • A few cherry tomatoes or 1 large tomato, chopped

  • 1 (28 oz.) can of chopped or purred tomatoes in tomato sauce

  • 3 tbsp. of tomato paste

  • 3 tbsp. of “Sweet Zivile” chili oil

  • Feta cheese and herbs for topping

  • Pita or French bread to serve with

  • 6-12 eggs

Let’s make it

  • Preheat the oven to 350F.
  • In a cast iron skillet or any other shallow pan, which could be placed in the oven, pour 4 tbsp. of olive oil and fry onions until they are cooked. Add garlic at the end.
  • Add tomatoes, cook for a 3-4 min, then add tomato paste, can of tomatoes, chili oil and cook for 5-8 min until it thickens a little bit.
  • Make some indentations and place eggs in.
  • Bring pan back to the boil and place it in the oven for 10-15 min until eggs are cooked to your likeness. 
  • Top it of with cubed or crumbled feta, fresh basil or cilantro or any other herbs you like. Drizzle 1-2 tbsp. of good olive oil and serve with your favorite bread.
